Azhagar Dosai recipe

Just to give an introduction about this dosa, particularly its name 'azhagar dosai'..It is most common prasadam(divine food) in vishnu temples in tamil nadu. In madurai (azhagar temple) & srirrangam (renganathar temple) this dosa is the famous one. hence the name 'azhagar' dosai. this dosa is normally very thick in form viz., two times the thickness of regular dosa but its very tasty..

i tried this dosa (thanks to foodie blog) and it came very well. i made addition of hing powder to the batter which gives nice aroma to dosa. also i made the size of dosa as similar to regular one..:) so dats the only difference from temple dosa..here goes the recipe..

Ingredients:

Black urad dal(whole) - 1cup
Idly rice - 2cups
Pepper powder - 1tbsp
dry ginger powder - 1tsp
Salt to taste
Curry leaves - few
hing powder - a pinch
Ghee (while making dosa)

Method to prepare azhagar dosai:

1. Wash black urad dal & rice and it has to be soaked in water overnight (7-8 hours)

2. First add the rice in grinder and after some minutes add urad dal. Grind to coarse batter and not too fine(similar to adai format). If necessary add little water.

3. Transfer the batter to a bowl and add salt, pepper powder, curry leaves & dry ginger powder. Mix thoroughly. Close the bowl with a lid and keep aside for 7-8 hours for fermenting. (normally use big vessel so that it wont overflow after fermentation).

4. Heat tawa/pan and pour one spoon of batter and make rounds. add ghee to its sides. after few minutes, use a ladle to turn it to another side. the dosa will get cooked. keep the gas stove in simmer while making this dosa.

Azhagar dosa is ready. serve hot. side dish as per your wish..try out this easy tasty dosa in your home.
