Veg Kadai with Paneer recipe

Veg Kadai with paneer recipe:

Ingredients:

Chopped vegetables - 1 cup ( i chose carrot, peas and potato..you can add any vegetables as you wish)
Chopped onion - 1/2 cup
Tomato paste - 1/2 cup
Finely chopped fresh ginger and garlic - 1tbsp
chopped fresh paneer- 100gms
Oil - 2tbsp
Salt to taste

Spices:

Coriander powder - 1tbsp
Cumin Powder - 1tbsp
Cinnamon - 1 piece
Cloves - 2no
Kasuri methi leaves crushed - 1/2tbsp
Fennel seeds - 1tbsp
Shahi jeera - 1/4tsp
Red chilli powder - 1tbsp

Method to prepare Vegetable Kadai with Paneer:

1. Pressure cook vegetables for 2-3 whistles.
2. Heat oil in a pan and add fresh ginger and garlic.Fry till raw smell goes out.
3. Add chopped onion and fry till it turns out translucent.
4. Add tomato paste and mix well. Let it boil for 5-10 minutes.  Add above mentioned spices with salt.
5. Mix thoroughly. After few minutes add the cooked vegetables with required amount of water.
6. Let it cook for 5-10 minutes in simmer flame.
7. In another pan heat oil and add chopped paneer. fry for few minutes till it becomes light golden colour.
8. Add the fried paneer with vegetable kadai, Stir well.

Hot veg kadai is ready. Serve with rotis/chapatis.

Mixed kadai vegetable recipe

How to prepare mixed kadai vegetable dish..

Ingredients:

mixed vegetables(chopped) - 150gms (you can use any vegetables which you like most. i used capsicum, potato, green peas, cauliflower)
chopped onion - 1 (cut lengthwise)
chopped tomato - 1
ginger garlic paste - 1tsp
cumin powder - 1tsp
coriander powder - 1tsp
garam masala powder - 1/4 tsp
chilli powder -  2tsp
pepper powder - 1tsp
turmeric powder - 1tsp
ghee - 1tsp
gingelly oil - 1tsp
cumin seeds - 1/2 tsp
grinded coconut - 1cup
coriander leaves - few
salt to taste

Method to prepare mixed kadai vegetable:

1. wash the chopped vegetables with clean water and cook for 5minutes.
2. take a kadai and add ghee & gingelly oil, once heated add cumin seeds, then add chopped onion & tomatoes. fry it for few minutes.
3. now add the vegetables to it and fry for few more minutes. add all the powders mentioned and mix it well.
4. add 3-4 glass of water, add salt and close the lid. let it cooked for 5-10minutes.
5. once the vegetables and cooked well, add the grinded coconut to it and again close the kadai with lid and allow it to cook for few more minutes.
6. add piece of butter to it and mix well.
7. once it becomes like gravy format, garnish with  coriander leaves and switch off the flame.
