Vermicelli Kheer/Semiya Kheer

Ingredients

Vermicelli - 1cup
Condensed milk  - 1cup
Sugar - 1cup (depends on one's taste)
chopped dry fruits - few
Ghee - 1tsp

Method to prepare Vermicelli/Semiya Kheer

1. Add teaspoon of ghee in a pan and roast vermicelli to golden colour. If you use roasted vermicelli then skip this step.
2. Add water with vermicelli and pressure cook it for 2-3 whistles
3. Heat pan and add pressure cooked vermicelli. Add condensed milk and sugar. Mix thoroughly. Let it cook for 10-15 minutes in simmer flame.
4. Stir often to make sure that it wont get stick to pan bottom.
5. Once it gets thickened to kheer status switch off the flame.
6. Heat ghee in a pan and roast dry fruits. Add it on top of kheer.

Hot vermicelli kheer is ready now. It can either be served

Kaju katli - Cashew katli

Ingredients:

Cashew (powdered) - 1 cup
Sugar - 1/2 cup
Milk - 2tblsp
Ghee - Just for greasing

Method:

1.Powder the cashews in a dry mixer. You have to be careful here, just grind it in a stretch, don’t stop in between and grind.
2.Boil sugar with water and keep stirring. Keep little water in a small bowl and just pour few drops in the water to check the consistency.
3.At this stage,low the flame add the powdered cashew and keep stirring.Say for 3-4 minutes in low flame and your mixture gets thick and starts boiling, switch off the flame.
4.Keep stirring in the pan itself with the ladle and the mixture turns more like a dough.
5.Roll the dough into thin layer and cut it diagonally to make pieces.
6.Your Kaju Katli is ready now to enjoy! Just melts in our mouth!!

Malpua

Malpua recipe

Make a batter with the following

1/2 cup all purpose flour/maida
1/4 cup roasted rava/sooji
1 cup evaporated milk (almost)
2 tbsp sugar

Let the batter sit for 2-3 hours for best results

Heat oil for deep frying in a kadai. once it is heated, simmer the flame for shallow frying.

Pour the batter as small rounds in the oil and fry it till it gets pale brown colour. do not overfry.

Prepare sugar syrup and paster it to the fried rounds which we prepared.

Do not dip it more than 10minutes as we want the malpua to be little crispy/crunchy with yummy sweetness.
