Stuffed Capsicum with paneer & baby corn recipe

Stuffed Capsicum recipe

Ingredients:

Capsicum - 4 (red, yellow or green)
Boiled & grated potato - 1cup
Diced Paneer - 1/2 cup
Steam cooked baby corn - 1/2 cup
Chopped onion - 1/4cup
Chopped Green chillies - 2
Ginger - a piece
Cumin seeds - 1/4tsp
Turmeric powder - 1/4tsp
Garam masala powder - 1/2tsp
Red chilli powder - 1tsp
Dry mango powder - 1/4tsp
Oil - 2tbsp
Salt to taste
Hing powder - a pinch
Chopped coriander leaves - few

Steps to prepare potato stuffing

1. Heat oil in a pan and add cumin seeds. Then add ginger, green chillies and onion. Fry well.

2. Add turmeric powder, followed by potato, paneer and baby corn. mix thoroughly. Add all the mentioned spices.

3. Add salt, chilli powder and hing powder. mix well and cook for about 10 minutes till the raw smell goes off. Do not add water as we need thick stuffing.

4. Switch off the flame and garnish with coriander leaves. let it get cool or warmed enough.

Now stuffing is ready. next we need to fill it in capsicum.

1. Take whole capsicum, wash with clean water and using sharp knife, cut the top portion of capsicum. remove the seeds from inside and wash it well. Wipe it with clean dry cloth. Now capsicum is ready for filling.

2. Take spoon and fill each capsicum fully with gravy. repeat the same for all capsicum. keep it aside.

3. Heat oil in thick bottomed pan, place the filled capsicum next to each other. Cook it in simmer flame. Using spoon, turn the sides of capsicum so that it gets steam cooked well.

You can see the sides of capsicum gets shrinked and wrinkes will be seen. That means it is cooked well. Turn off the stove.

Hot Stuffed Capsicum is ready now. Serve hot with roti, chapatis or even it will be very good starter before a meal.

Carrot Halwa Recipe

Carrot Halwa (Gajjar Halwa) Recipe:

Ingredients:

Finely Grated Delhi Carrot - 4 cups (washed & cleaned)
Milk - 500ml
Sugar - 2 cups (based on your taste)
Broken Cashew - few
Cardamom powder - a pinch
Ghee - 100gm

Steps to prepare carrot halwa :

1. Heat ghee in a pan and add grated carrot. Fry for few minutes.
2. Add milk and mix well. Keep the flame in simmer and let it slowly cook.
3. Once milk gets evaporated, add sugar and stir well. If needed add ghee, to make it greasy.
4. Again leave it for some more minutes, till sugar dilutes and gets mixed well.
5. Heat ghee in a spoon, fry cashew and add to halwa. Add cardamom powder to it and mix well.
6. Tasty carrot halwa is ready. Serve hot.
