Milagu Kuzhambu / மிளகு குழம்பு Recipe

Ingredients:

Tamarind Juice - 1cup
Black Pepper  - 1tsp
Cumin Seeds - 1tsp
Dry red chilli - 3
Garlic - 10 pieces
Gram dal - 1tsp
Turmeric powder - 1/2 tsp
Hing powder - a pinch
Salt to taste
Gingelly oil - 1tsp

For tempering

Mustard seeds, gram dal, curry leaves.

Steps to prepare Milagu Kuzhambu

1. Heat oil in a pan and roast pepper, cumin seeds, dry red chilli, gram dal, garlic one by one. Once it is cooled, grind it in mixer grinder to fine powder except garlic. If it is coarse, then add few water to get it as fine paste.
2. Heat oil in a pan and temper the above mentioned ingredients for tempering. Add the tamarind juice to it and also add the grinded mix powder/paste to it.
3. Add salt. Stir well. Add 1tsp of gingelly oil. I usually add gingelly oil generously, so that it will increase its life span and also the flavour & taste.
4. Keep the stove in medium flame and let it get boiled till the water content reduced to 2/3 of its level. You will see the milagu kuzhambu gets thickened and the oil starts to oozes out.
 That is when you need to switch off the flame

Hot milagu kuzhambu is ready. Serve hot with rice and flame fried papad (sutta appalam).
