Rava kichadi

Rava kichadi

Rava kichadi or sooji kichadi is one of the tastiest tiffon of indian dishes. It is made with sooji along with mixed vegetables.

Ingredients:

1cup rava/sooji (roasted)
1/2 cup chopped mixed vegetables (potato, carrot, beans or any of your favourite veg)
green chillies 2-3
chopped onion
pinch of turmeric powder
1/2 tsp mustard seeds
1/2 tsp gram dal
pinch of hing powder
oil
salt to taste

Method to prepare rava kichadi:

1. heat the oil in a pan and add mustard seeds. once it crackles, gram dal and fry it. Then add chopped onion, green chillies and turmeric powder. Fry the onion till it gets light brown colour.
2. add the mixed vegetables to it and fry for few minutes.
3. Then add sufficient amount of water to get vegetables cooked and add salt to it.
4. Once the vegetables are cooked, add rava and stir with the spoon continously. make sure the flame is now made simmer. else it gets burned out at the bottom. Add salt according to taste.
5. Stir the kichadi well and add fresh coriander leaves for garnishing.
6. Serve hot with coconut chutney.

Karamani sundal

Karamani sundal
Ingredients:
1cup karamani (or) cow peas(soaked in water overnight)
1/2 cup grated coconut
pinch of asafoetida powder
curry leaves
chilli powder 1 tbsp
salt to taste
1tbsp oil
1/2 tsp mustard seeds

Method to prepare karamani sundal

1. Soak karamani or cow peas in water. Let it be for 7-8 hours or overnight.
2. cook the cowpeas in pressure pan.
3. heat the oil in a pan and add mustard seeds. Once it crackles, add cooked karamani along with grated coconut.
4. Mix it well by adding chilli powder, salt, hing powder and curry leaves.
5. Simmer the flame and fry it for few minutes till it gets mixed well.
6. karamani sundal is ready now.

Karadayan nombu adai

Karadayan Nombu adai/kaara adai

Karadayan nombu is one of the hindu festival which falls in the month of february every year. The main dish for this festival is "nombu adai or kaara adai". It is a rice cake made with rice flour, cowpeas and addition of green chillies, curry leaves, grated coconut etc.,

Let's see the ingredients:

Ingredients:

1 cup rice flour
3/4 cup of water
2-3 green chillies
1 cup cowpeas (karamani) soaked overnight
curry leaves - few
salt to taste
oil 1 tbsp
1/2tsp mustard seeds

Method to prepare karadayan nombu adai or kaara adai:

1. Heat the pan and add water with little amount of salt and 1/2 tbsp oil (preferably gingelly oil) and let it boil for few minutes.
2. Once it gets boiled well, add rice flour slowly and stir continouly with spoon. This is to avoid forming of small balls of rice flour. So you have to keep stirring it well to get the rice flour well mixed with water. Once you start adding rice flour simmer the flame else the bottom of the pan gets burned with rice flour. In tamil we used to say "adi pudichudum"
3. Repeat stirring for few minutes till it becomes non-sticky with pan.
4. Turn off the flame and keep the dough to get slightly cool.
5. In the mean time, cook the cowpeas ( which was soaked in water overnight) in pressure pan. Add little salt to it and get cooked.
6. Heat the pan and add oil. Once it gets heated, add mustard seeds and after it crackles, add chopped green chillies and curry leaves. Fry it for few minutes and switch off the flame.
7. Take large mouth vessel and put the dough to it along with seasoning. Also add the grated coconut and cooked cowpeas to it.
8. use hands to mix it well. If needed add salt to it.
9. Take small rounds of dough and make vada shaped cakes. Repeat the same for the entire dough mix and keep the kara adai cakes in idly maker.
10. Once the idly maker is filled with cakes, switch on the flame and steam cook it for 10 minutes.
11. Karadayan nombu adai or kaara adai is ready now.
