Ingredients :
Cooked Basmati Rice - 1cup
Chopped Vegetables - 2cups (i used potato, green peas, beans, carrot)
Milk - 1/2cup
Curd - 1/2 cup
Pudina leaves (mint) -a bunch
Coriander leaves - for garnishing
Broken cashew nuts - 10
Dry grapes - 5
Whole garam masala - 5gm
Chopped green chilles - 2
Chopped Onion - 2
Cumin powder - 1tsp
Coriander powder - 1tsp
Turmeric powder - 1tsp
Kala Jeera - 1/2tsp
Red chilli powder - 1tsp
Salt to taste
Tomato Sauce - 1tsp
Ghee - 2tsp
Oil - 1tsp
Method to prepare Vegetable Briyani:
1. As general rule, cook basmati rice with water ratio (1:2). Make sure it should be cooked with rice looking separate.
2. Heat oil in a pan and add whole garam masala. Fry till it loses raw smell and then add chopped onion along with green chillies. (keep some onion reserved which has to be used at the end as toppings)
3. Fry the onion till it become golden brown colour and then add all the powders mentioned in the ingredients. Mix well in simmer mode. Add salt to taste.
4. Add milk now and stir well. Add tomato sauce. Add chopped vegetables and mint leaves.
Mix well.
5. Let it cook for 5-10 minutes. Close with a lid and let the vegetables cook well.
6. Make sure you have kept the cooked basmati rice in large mouth vessel. Use a spoon and gently make the rice separate.
7. Open the lid and now add the curd to it. Adjust salt and chilli as per taste.
8. Close the lid again and leave it to steam cook for 5-10 more minutes.
9. Between, switch the other stove and heat ghee in a pan.
10. Add dry fruits and fry till it gets nice golden colour.
11.Similarly prepare fried onions with ghee which we have kept reserved earlier.
12. The vegetables have cooked well and with no water left. Now its time to switch off flame and mix everything together.
13. Add the vegetable masala to the rice, add the fried dry fruits, some coriander leaves for garnishing.
14. Mix everything gently and add fried onions on top of it.
15. Hot vegetable briyani is ready now. Serve immediately. Side dish can be any raita :)
Note: to get rice separate while preparing for briyani, you can add 1/2 tsp of oil to the rice along with water before you put in pressure cooker. this will help in rice cooked best for briyani/pulav..
