Ezhu kari kootu recipe

Ingredients:

Assorted vegetables – chow chow, beans, carrot, senaikizhangu,potato, kavathu kizhangu, pachai mochaikaai – chopped, 3 cups. (its your wish to choose any vegetables you like)
tamarind – ¼ cup, soaked in hot water
toor dal – ½ cup
water – 2 cups
coconut – ½ cup
dried red chilies – 10
coriander seeds – 1/3 cup
channa Daal – ¼ cup
oil – 4 tbl spoon
curry leaves – 10
mustard seeds – 1 tspn
asafoetida, a pinch
salt, per taste
jaggery - a piece

Method to prepare ezhu kari kootu (or puli itta kari):


Grind the coconut, Chilies, coriander seeds and channa daal, add water and grind to a fine paste. keep it  aside.
extract  the tamarind juice and set aside.
cook toor dal. While this is cooking, heat 2 tables spoon of oil in a big pan, add vegetables and fry for 2-3 minutes.
next add the tamarind extract and salt and cook till the raw smell of tamarind is gone(about 15 to 20 minutes).
Add the ground paste and cooked/mashed dal. Let the whole thing come to a boil and reduce heat and simmer for 5 minutes. now add the jaggery piece to it. it gives a nice sweet taste to it.
Heat remaining oil in a small pan and add the mustard seeds and Asafoetida. Once the seeds pop, add curry leaves and give it a quick toss. Pour on top of the Sambar. Serve hot with rice.

Thiruvadirai Kali recipe

Thiruvadirai kali is one of the dish prepared with rice and jaggery. It is the main dish for the "thiruvadirai" or "aaruthira darisanam" festival (lord shiva) during the month of december. lets see how to prepare this sweet dish.

ingredients:

raw rice - 1 cup
jaggery ground - half cup
grated coconut - 1/4 cup
cardamom - 2
broken cashewnuts -few
ghee - 4 to 5 tbsp
water - 2 cups

Method:

Put rice in a pan and dry fry it till it gets roasted. put the rice in mixer and blend to coarse mixture. do not powder it.

In a heavy bottom pan with ground flour, 2 cups of water and boil it and put the lid, and hold for half an hour.

In the meantime, with a teaspoon of ghee, fry cashew nuts.add cardamom seeds along to it.

Add jaggery in a pan with 1/4 or 1/2 cup (jaggery sinks) of water, boil them, and filter it.

Stir well with jaggery in moderate fire, add flour and stir well to mix. Add coconut, roasted cashew nuts, cardamom powder and ghee and stir well once again put down.

How to prepare broccoli fry

Ingredients:

broccoli - 1flower bunch
chopped onion -1/4cup
chopped tomato -1/4cup
coriander powder -1/4tsp
red chilli powder- 1/4tsp
coriander leaves -few
mustard seeds -1/4tsp
oil -1tsp
salt to taste

Method to prepare broccoli fry

1. Remove the broccoli florets and wash with clean water
2. heat oil in a pan and add mustard seeds to crackle.
3. add onion and tomato and fry well.
4. add broccoli florets with coriander & chilli powder.
5. add salt and fry well. close the pan with lid and let it cook for some time till broccoli is cooked and mixed with ingredients.

serve hot with chapatis/rotis.

maida ellu chips

how to prepare maida ellu chips

ingredients:

maida (all purpose flour) - 1cup
sesame seeds (white ellu) - 1tsp
red chilli powder & salt to taste
oil -1/4litre for frying

method to prepare maida ellu chips:

1. take a bowl and add maida along with sesame seeds, salt & chilli powder. mix thoroughly.
2. add water and make it as a dough. use little oil to become non-sticky and soft dough.
3. take small rounds of dough and use chapati roll and make it as big rounds.
4. cut it into small pieces like biscuits.
5. heat oil in a pan and add the slices, deep fry it.

sundaikkai vathakuzhambu recipe

how to make sundaikkai (turkey berry) vathakuzhambu

Ingredients:

tamarind - 1 small lemon size
mustard seeds -1/4tsp
fenugreek seeds - 1/4tsp
curry leaves - few
gingelly oil -1tsp
turmeric powder - 1/4tsp
gram dal - 1/4tsp
sundaikkai - 10pieces
sambar chilli powder - 1tsp

Method to prepare sundaikkai (turkey berry) vathakuzhambu

1. soak the tamarind in water for about one hour.
2. after an hour, mash the tamarind with hand and filter it out to get pure tamarind juice.
3. heat oil in a pan and add sundaikkai and fry it well and keep it aside.
4. now add oil in the pan and add mustard seeds to crackle.
5. then add fenugreek seeds and fry little.
6. add curry leaves along with turmeric powder and fry it little.
7. pour the tamarind juice into the pan along with fried sundaikkai.
8. add required amount of chilli powder and salt.
9. allow it to boil for 15-20minutes depending upon the time it gets thickened. add few gingelly oil if required. it gives nice aroma.
10. the gravy should be thickened enough and that is the time you have the switch off the flame.

sundaikkai vathakuzhambu is ready. it goes too good with rice. best side dish is sutta appalam :)

murungai poricha kuzhambu recipe

how to prepare murungai poricha kuzhambu

Ingredients:

chopped murungai(drumstick) - 1
urad dal - 1/2tsp
cooked dal (toor) - 1cup
grated coconut - 1/2cup
dry red chillies - 6
cumin seeds - 1tsp
curry leaves - few
mustard seeds - 1/4tsp
salt to taste
oil -1tsp

Method to prepare murungai poricha kuzhambu


1.slice drumstick into small pieces and pressure cook for 2-3 whistles.
2. dry roast urad dal and add along with coconut, chillies, cumin seeds into a mixer and blend to fine paste. if needed add some water to get nice paste.
3. heat oil in a pan and add mustard seeds to crackle.
4. add cumin seeds along with curry leaves and fry well.
5. now add the cooked dal and mix well.
6. let it cook for few minutes and now add the grinded paste and mix well. also add cooked drumstick to it. check for salt.
7. allow it to cook for 5-10minutes. let the kuzhambu gets cooked like a gravy.
8. switch off the flame and garnish with coriander leaves.

6. let it get fried for few more minutes.

Kaara paruppu recipe

How to prepare kaara paruppu dish

Ingredients:

toor dal - 1cup
chopped onion - 1
chopped tomato - 1
chopped green chillies - 4
mustard seeds - 1/4stp
cumin seeds - 1/4tsp
curry leaves - few
hing powder - a pinch
red chilli powder - 1/2tsp
coriander leaves - few
salt to taste
oil - 1tsp

Method to prepare kaara paruppu:

1.  soak toor dal in water for 30minutes.
2. pressure cook dal for about 4-5whistles (it has to be mashed well)
3. heat the oil in a pan and add mustard seeds to crackle.
4. add cumin seeds, onion , green chillies, curry leaves and fry well.
5. now add tomato and fry well for few minutes.
6. add mashed dal into it and add few water if needed.
7. add salt, red chilli powder, hing powder and stir well.
8. let the gravy cook for some time with low flame.
9. garnish with coriander leaves and switch off the flame.

kaara paruppu is ready now.
