Thengai araithu vitta lemon rice recipe

how to prepare Thengai (coconut) araithu vitta lemon rice:
lemon rice is one of the easiest variety rice dish to prepare. it is also very tasty and good for health.
 
Ingredients:

lemon - 1 small size
rice - 200gms
chopped green chillies - 4
green peas - few
mustard seeds - 1/4tsp
cumin seeds - 1/4tsp
urad dal + gram dal - 1/4tsp
oil
salt to taste
curry leaves - few
grated coconut - 1/4cup
turmeric powder - few

Method to prepare Thengai (coconut) araithu vitta lemon rice:

1. wash the rice and clean thrice with pure water.
2. pressure cook the rice for 2-3 whistles. do not over cook rice as it wont suit for variety rice. rice should be separately visible. it should not get mashed. so take care while you add water for cooking rice.
3. once it is cooled, fill the rice in a plate and keep it aside.
4. if you kept the lemon in refrigerator, take out 10minutes before you cook this dish. since it is too cool, you feel difficult to crush the juice.
also you can put the lemon in warm water for few minutes which will make easy to get juice while you squeeze the lemon.
5. put the grated coconut and green chillies in a blender and grind to nice paste.
6. heat the oil in a pan and add mustard seeds to crackle.
7. add cumin seeds, gram dal, urad dal, green peas, turmeric powder & curry leaves and fry well.
8. add the cocnut chilli paste to it and fry well for few minutes.
9. pour the fried ingredients to the rice and mix well.
10. now squeeze the lemon juice to the rice along with salt and mix thoroughly.
11. garnish with coriander leaves.

this is one of the different variety of lemon rice. optionally you can add fried peanuts or sev on top of it.
